Get your fire cooking foundations right
This is the place to start. A hands-on day designed to give you the confidence to light your barbecue, understand why fire behaves the way it does, and take proper control of the heat. We’ll explore fuel, airflow, direct and indirect cooking, temperature control and all the little decisions that turn uncertain barbecue cooking into something instinctive and enjoyable.
It doesn’t matter what you cook on at home — kettle, kamado, gas barbecue, fire pit or a simple homemade grill. We’ll cook in different ways with both charcoal and wood and on different types of kit, including over an open fire, so you learn principles you can take home and use on whatever you have.
As with all Fire School classes, we’ll finish the day around the table, sharing a generous feast of everything we’ve cooked, with plenty of time to eat, talk and go back over what you’ve learned.

Light charcoal and wood fires simply and reliably, and learn how to build the right fire for the cooking you want to do.

Learn to read your fire, measure the heat and make adjustments as you cook, rather than simply hoping for

Kettles, kamados, gas barbecues, grills, fire pits and open fires — learn the principles that work whatever you cook on.
FUEL & AIRFLOW
Understand how fuel and oxygen work together, when to use charcoal, wood or both — and why you probably need less fuel than you think.
DIRECT & INDIRECT COOKING
When to cook directly over the fire, when to cook away from it, and how combining the two gives you much more control.
COOKING, NOT JUST BARBECUING
Use grills, pans and hot plates to cook a complete meal over fire, building flavour and texture rather than simply grilling meat.
