Understand how flavour works
A six-hour, hands-on Fire School class exploring how we build flavour, from the first sprinkle of salt to the final spoonful of sauce.
Rather than following a collection of recipes, we’ll dig into why things work. You’ll learn how seasoning actually behaves, discover what marinades can — and can’t — do, and explore the building blocks of great rubs and sauces.
There’ll be plenty of cooking, comparative tasting and experimentation along the way, putting those ideas into practice over fire. You’ll create your own rubs and sauces to take home, along with the knowledge to make them again — and, more importantly, change them to suit whatever you’re cooking.
Less recipe-following. More understanding. Better cooking.

SALT & SEASONING
How salt works, when to add it and why timing can make such a difference.
BUILDING A GREAT RUB
How to balance salt, sweetness, spice, heat and aromatics to create your own dry rubs.
TASTE, TEST & ADJUST
How to taste critically and understand what a dish needs rather than simply reaching for a recipe.
MARINADES
What marinades can — and can’t — do, and how salt, acid, fat and flavourings behave.
SAUCES & GLAZES
The building blocks of great barbecue sauces, from sharp and fresh to sticky, sweet and smoky.
BUILD YOUR OWN FLAVOURS
Use what you’ve learned to create rubs and sauces of your own — and know how to adapt them for different foods.
