Butchery & Fire – Monday 15 March 2027

Get confident with butchery and learn how understanding the animal can make you a better cook.

A properly hands-on day exploring how to prepare and cook meat over fire, from breaking down a whole chicken to working with seasonal British game. We'll look at different cuts, how to get the best from them, and why a little butchery knowledge makes such a difference to your cooking.

Working alongside an experienced guest butcher or chef, we'll explore a range of techniques before cooking everything over wood and charcoal.

We'll finish the day sitting down together to enjoy a generous feast of everything we've prepared.

Why does this class cost a little more?

Butchery & Fire includes specialist tuition from a guest butcher alongside my own teaching, as well as a generous selection of quality, seasonal British meat and game. The slightly higher price reflects the additional expertise and ingredients that go into making this a really special day.

Practical information

Classes last approximately six hours, with all food, ingredients and equipment provided.
