More Than Meat – Friday 2 April 2027

Because great barbecue is about so much more than meat.

A hands-on day putting vegetables centre stage over fire. We'll explore how wood and charcoal can transform everyday ingredients, bringing out sweetness, adding smoke, building texture and creating dishes that are every bit as exciting as anything from the meat counter.

From grilling and roasting to smoking and cooking directly in the embers, we'll experiment with different techniques, seasonal vegetables and plenty of bold flavours. We'll make a generous spread of colourful dishes, with sauces, dressings and accompaniments that bring everything together.

Inspired by my book Charred , this class is about giving vegetables the attention they deserve, whether you're cooking for vegetarians or simply want to make your barbecue more interesting.

We'll finish the day sitting down together to enjoy a proper feast of everything we've cooked.

Practical information

Classes last approximately six hours, with all food, ingredients and equipment provided.
