Cook, share & feast around the fire
A colourful, generous day of cooking inspired by Turkey, the Levant and beyond. This is food made for sharing: smoky grilled meats, charred vegetables, warm breads, fragrant spices, heaps of fresh herbs, creamy sauces, sharp pickles and plenty of crunch, all coming together around the fire.
Rather than focusing on one particular cuisine, we’ll explore the flavours, ingredients and fire-cooking traditions of the region. We’ll cook directly over hot coals, roast and char vegetables, work with marinades and spice blends, and make breads, sauces and accompaniments to bring everything together.
Along the way, we’ll look at how to build contrast and balance — smoky and fresh, rich and sharp, creamy and crunchy — and how a handful of simple elements can turn into a table full of completely different dishes. It’s as much about learning how to put a meal together as it is about individual recipes.
There’ll be plenty of hands-on cooking throughout the day, with everyone contributing different things to the table. And we’ll finish as we always do at Fire School: sitting down together to a generous feast of everything we’ve cooked.
