Explore flavours of the Caribbean over fire

A vibrant, flavour-packed day exploring Caribbean street food and the many different ways fire, spice and fresh ingredients come together across the islands.


Drawing on recipes and research from my MasterChef book Street Food of the World, we’ll cook our way through dishes inspired by different Caribbean islands and traditions. We’ll explore the ingredients and techniques behind them — from marinades, spice blends and fiery sauces to slow cooking, grilling and cooking directly over the coals.



Along the way, we’ll look at how heat, sweetness, acidity, smoke and spice work together, and how to build layers of flavour rather than simply making food hot. There’ll be plenty of hands-on cooking, with lots of different dishes coming together throughout the day.


This is generous, sociable food made for sharing, so we’ll finish as we always do at Fire School: around the table with a big feast, plenty to eat and time to talk through what we’ve learned — with lots of ideas and techniques to take back to your own barbecue.
